-Humanity's meat market has more than quadrupled since 1961, from about 70 million tons back then to almost 300 million tons in 2010, according to the FAO. Much of that increase has come from India and China. Those two countries, accounting for about a third of the world's total population, once relied mostly on rice and vegetables to feed their people. Now their booming economies are enabling them to buy meat, and vast tracts of Amazon rainforest are being clear-cut to satisfy the unprecedented demand for corn and soybeans as animal feed. And that's not all that humanity's appetite for meat is doing to the world. The livestock industry accounts for some 18 percent of global greenhouse gas emissions, according to a 2006 FAO study. Then there's the grain and water it takes to raise cattle. NPR ran the numbers and found that it takes 6.7 pounds of grain and forage and 52.8 gallons of water to produce a single quarter-pound ground-beef patty - hold the pickle, the lettuce and the bun. And Americans are in no position to wag a finger. Despite the incessant claims on talk shows that they're eating healthier these days, Americans remain among the most voraciously carnivorous people on the planet, devouring 270.7 pounds of meat a year per capita. 真的好消息! Very Good News indeed! 美聯社報導,微軟創辦人比爾蓋茲最新投資的科技公司不是網路或軟體開發商,而是利用植物性蛋白研發出幾可亂真素蛋、素雞的食品科技新創業者,預計將在食品業掀起新一波革命。

                      位於舊金山索瑪區(SOMA)的Hampton Creek Foods絕非一般食品公司,因為該公司在美國上市的第一個產品「Just Mayo」素美乃滋完全不含雞蛋,卻有傳統美乃滋濃郁口感,這正是吸引蓋茲投資的主因。 創投研究機構CB Insights執行長桑瓦爾(Anand Sanwal)表示:「這波食品革命的趨勢估計短期內將持續下去。」該公司資料顯示,去年食品相關新創業者共獲得創投公司投資3.5億美元,是2008年的7倍。 投資人看好這類新技術能減少肉類消耗量,連帶降低人類因食肉量過高而罹患心血管疾病的機率,也能抑制禽流感疫情擴散。畜牧業耗費大片土地、水源及農作物飼料對環境造成的衝擊也將因此縮小。 以Hampton Creek為例,該公司的生化學家透過顯微鏡研究豆類及來自全球60國共1,500種不同植物的分子結構,研發出11款完全重現雞蛋烹飪特性的植物性替代品。除了素美乃滋之外,該公司還將推出素餅乾麵團,以及完全植物製成卻能做出炒蛋的素蛋液。 Hampton Creek執行長泰崔克(Josh Tetrick)表示:「我們採用植物製作素蛋的過程不僅降低溫室氣體排放,也不連累任何動物,且產品價格更實惠,整體而言創造更永續發展的食物供應鏈。」 除了蓋茲之外,Hampton Creek投資者還包括PayPal共同創辦人席爾(Peter Thiel),以及昇陽共同創辦人科斯拉(Vinod Khosla)的創投公司Khosla Ventures。 蓋茲在南加州投資的另一家食品創新業者Beyond Meat則是研發出兼具雞肉味道與口感的素雞柳條。該公司執行長布朗(Ethan Brown)表示:「這款素雞柳條能同時滿足全素者及肉食者的需求。」Beyond Meat投資者還包括推特創辦人經營的創投公司Obvious Corp.,及矽谷知名創投業者KPCB。 原文在此

SAN FRANCISCO - The startup is housed in a garage-like space in San Francisco's tech-heavy South of Market neighborhood, but it isn't like most of its neighbors that develop software, websites and mobile-phone apps. Its mission is to find plant replacements for eggs. Inside, research chefs bake cookies and cakes, whip up batches of flavored mayonnaise and pan-fry omelets and French toast — all without eggs. Funded by prominent Silicon Valley investors and Microsoft founder Bill Gates, Hampton Creek Foods seeks to disrupt a global egg industry that backers say wastes energy, pollutes the environment, causes disease outbreaks and confines chickens to tiny spaces. - Plant-based alternatives to eggs, poultry and other meat could be good for the environment because it could reduce consumption of meat, which requires large amounts of land, water and crops to produce, backers say. It could also benefit people's health, especially in heavy meat-eating countries like the U.S., and reduce outbreaks of diseases such as avian flu, they say.... Reference here

Arsenic_in_Chicken What Was Arsenic Doing in Our Chicken, Anyway? - It might seem like cause for cheer that the U.S. Food and Drug Administration has ordered (September 2013) the withdrawal of most drugs containing arsenic fed to chickens, turkeys and hogs. - one of the four drugs banned will stay on the market and continue to be fed to turkeys - Why arsenic was even in animal feed in the first place is fairly shocking, though perhaps not so much given how industrial farms raise much of the food we eat. Since the 1940s, farmers have fed arsenic to animals as a way to promote growth and weight gain with less feed. - Just as troubling as evidence that trace arsenic might be in the meat we eat is what happens to the toxin once it is passed through as animal waste. Some of the waste is used as fertilizer, or isn't properly disposed of, leading to arsenic in soil, water and crops. - Even though the producer now has agreed to pull this toxic  feed chemical off the shelves in the United States, it says it won’t necessarily remove it from feed  products  in other countries unless it is forced by regulators to do so.
